Holla Whut's Poppin gengs, back again on my blog, and this the first day on 3rd week i practical on kitchen. On this week, we still try to make a perfect croissant and sourdough bread. But, for this time, we must make croissant base from real recipe start from mixing time, resting time untill all is done must follow the recipe. So, mr. Ical show step by step how to make croissant first and after that we going to make by each team.
For the next, mr. Ical also showing how to make sourdough bread, but not all student can make sourdough bread because we must have levain first that must we make untill 6 day before making the sourdough bread. So the student that not have a levain, must make a levain first and reach untill 5 or 6 day. After mr. Ical showing. We start to make a croissant first, and then the student that have levain going to make a sourdough bread.
We make croissant just until resting dough step, because we need to rest the dougb overnight before laminating the croissant fat. After that, we going to start the general cleaning on pastry and bakery area. When the kitchen area is clean we briefing and go home.
