DAILY ACTIVITY


ASSALAMUALAIKUM WARAHMATULLAHI WABARAKATUH

     HALOO GENGS, back to my daily activity on my blog, in this week i still learn about table d'hote menu but we learn with diffrent menu. Before that, as usually we one line and the senior checking the attendance list. After that, we clean up the kitchen because our kitchen is under renovation plus one of chiller on the kitchen is leaking so we must mop before we product the higiene food with higiene kitchen.
   As usually, our group get one dish will be prepared for tomorrow. And my group get the soup, for tomorrow we will be served the clam chowder which is the clam is frozen and we must thawing the clam before we use. After we towing the clam we clean with flowing water, and we blanch for make sure the clam is clean. after that, we make clamp stock. but we don't need the mirepoix and the bouqute garni, we just use the clamp to make that stock.
   When the ingredients has come, we take all the ingredients we need and we prepare. After all is done. Chef dino ask me to make the mascarpone cheese and beef wagyu patty. The mascarpone is done, patty is done, and all the group has done prepare. For the next, it's time to general cleaning and go home. For today we don't do many thing, because for today we just prepare and there are many story for tomorrow so keep checking for the update. thank you gengss.
