Daily Activity 7th week (HANDLE F.I.T.E EVENT)

   Assalamualaikum warahmatullahi wabaraktuh

   Holla gengs, i'm back again on Nourriture artisanale for sharing many kitchen knowledge and kitchen story. So on this week, i just post 1 daily activity content because on this week my class will prepare the FITE event for 260 pax. On first day, we just briefing and explaining for the menu. After that, we going to each team that have divided on friday. For the next, each team preparing their ingreidients. For my team, i just have 2 member because i just prepare lamb roast and sei sapi that will serve on thursday.

   On 2nd day, i back to prepare that lamb and beef and we marinating all of the lamb and beef. After that we going to packing on vacuum bag before we sousvide. For lamb we sousvide untill 2 hours and for the beef we sousvide untill 24 hours because we use brisket so we take a long time to sousvide this kind of cutting beef. After we sousvide the lamb and beef, i going to other section to help their job. On this day, we focusing to completing the preparation for lunch on wednesday, on lunch wednesday we prepare a lunch box and coffee break morning and afternoon.

   We going to 3rd day, on this day the preparation so crowded because this is final preparation for team that will served their dish on thursday and this the day for lunch box and coffee break tim on wednesday. My team just free on this day because finishing will start on thursday morning. so mr. ical want me and ica to prepare the vip buffet menu for thursday. Ica going to prepare soup and i going to prepare the dessert.

   On the day, is a 4th day we going on early mornings. My team going to braised the lamb and then for the sei sapi i going to smoke it. After all my prepare is ready, i going to prepare for vip lunch. After that, we going to restaurant to set up vip lunch. When the vip lunch is ready. i going to main venue to set up lamb and beef section. Alhamdulillah the event running success with no mistake untill finished.
